Filling the Freezer

I’ve mentioned before that my Mom is a talented cook. In addition to be talented, she loves to cook and gets joy from feeding people. Every time she’s here she fills my freezer with yummy food to help make our lives easier.

In the winter she makes us comfort food: chicken pot pies, casseroles, mashed potatoes, and other yummy, stick to your ribs kinds of meals. We don’t eat as much comfort food in the warmer months, so this time I asked her to replenish our stock of meatballs and to make muffins for Joseph.

Several years ago I found this meatball recipe, and while I don’t personally eat meatballs, people who eat meatballs love them. I prefer my spaghetti with a good quality red sauce and no meatballs, but that preference falls in the minority in our house. We haven’t made meatballs in over a year because we accidentally quadrupled the recipe last time we made them, so my freezer was filled to the brim with meatballs and I never thought that we’d get through all of them.

The school that Rosalie attended and that Joseph now attends, Windsong School, does a lot of Meal Trains for people in the community who are in need, and I frequently participate in them. I found having an abundance of meatballs was handy for Meal Trains. I could make a yummy meal for families with a minimal amount of work, which is perfect for my current season of life.

Mom doubled the recipe this time, so we have meatballs to last us a while. We had spaghetti and meatballs the night that she made them and she and Doug said they were delicious!

The other thing that I asked Mom to make was muffins for Joseph. I’m trying to avoid processed convenience foods as much as possible, and despite me not having a professional job, I still find my days filled with all kinds of commitments. I had frozen bananas, blueberries, and zucchini and I wanted to use as many of those items as possible. I found this recipe and asked my Mom to make a double batch. They were a big hit! I had enough ingredients to make another double batch, so she made some more.

She froze the muffins on a cookie sheet and then she double bagged them in Ziploc bags and froze them. Now, I can pull out a muffin for two at a time for Joseph and we have convenient snacks that are made with real foods.

It’s so helpful to have foods already prepared in our freezer! Do you have any foods that you make in advance and freeze?
